Not gonna lie, I’m really proud of the dinners we’ve been putting together the past few weeks - and this one had a lot of goodies!

Buffalo Chicken Pizza with Greek Yogurt Dough

Okay so I was MAJORLY craving pizza last Sunday but we’ve gone out for a few expensive meals recently (hey Monteverde and il Carciofo!) so we’re trying not to order takeout and I wanted something healthier/heartier than a frozen pizza. Then I remembered that you can make pizza dough with greek yogurt!

I’ve made the greek yogurt bagels before so I knew it would be decent… but this totally exceeded both of our expectations. To up the protein even more, we decided to make a buffalo chicken version. All I did was follow these instructions, except instead of topping with tomato sauce, I topped it with shredded rotisserie chicken tossed in buffalo sauce, followed by shredded mozzerella and very thinly sliced red onions. When it came out of the oven, I also sprinkled some green onions on too. I already want to make it again so don’t be surprised if you see it on next week’s roundup 😜

Eggroll Noodles

We haven’t make an “eggroll in a bowl” in a while - I forgot how EASY it is! Just saute ground turkey in olive oil, then add a bag of shredded cabbage or coleslaw along with your favorite Asian sauce. I like this Japanese BBQ sauce, but Trader Joe’s also has a good one called Soyaki. I added some Trader Joe’s squiggly noodles and then served it all with sriracha and sesame seeds. Easy peasy!

Steak Salad

On this episode of Steak Salad Summer (should I trademark that?!), we combined romaine, farro, corn, cotija cheese, red onion and skirt steak. We didn’t have any cilantro so I made a simple vinaigrette instead of the yogurt dressing I wrote out in this roundup, and we both agreed that we missed it… so we’ll make it this way next time!

Carbonara with Peas

Sooo I had an ambitious idea to try to recreate this salad we had at il Carciofo with peas, fava beans, ricotta and guanciale… but Mariano’s pickup really didn’t come through for us. They gave us SOUR CREAM instead of RICOTTA. In what world?!

Anyway, I had peas and pancetta, as well as eggs and pasta, so I thought - why not try to make a carbonara?! Well, let’s just say that you shouldn’t take any carbonara advice from me 🤣 It was fine, but not great. I’ll follow a proper recipe and report back next time!!

Salmon, Arugula & Cherry Salad

Since we’ve been on such a salad kick, Adam and I have been trying to think of different things we could add to arugula in particular. This salad idea started with cotija becuase we were buying that for the salad this week anyway… then he thought of cherries and then I thought of crunchy chickpeas and salmon. SO GOOD!
