Happy Sunday! This was a really good week of dinners and all of them were pretty easy to throw together. A few also gave us leftovers which is always so so nice. Let’s dive in!

Brats and Couscous Salad

As soon as the weather warms up, Adam craves brats ALL THE TIME. Luckily, I also think they’re delicious and I love when he grills because it takes something off my plate. We both had them with buns and mustard on Monday, and I paired it with the herby greek olive chickpea salad from the Ambitious Kitchen Cookbook (on sale right now!).

Adam doesn’t love olives so I only added a few castelvetrano olives (the best!) in and it was still so bright and flavorful. It also made so many portions!! We were eating this all week and it never got old.

Salmon with Edamame and Carrots

Adam made this dinner for us and it was a total breeze… aka I will be asking him to do this again and again. All he did was bake salmon filets on an oven pan at 400 for around 15 minutes. While that was going, he added shredded carrots and frozen edamame to a pan over medium heat with a little olive oil and Japanese BBQ sauce. We served all of that over rice with a little more sauce on top. Boom: DINNER.

Pasta and Turkey Meatballs

This was another super easy meal because I froze a batch of these turkey meatballs a few weeks ago, so all I needed to do was drop a few into a simple sauce! You can either use a jarred sauce or saute onion and garlic on olive oil before adding a can of crushed tomatoes. I also wilted a bunch of spinach and arugula for some extra nutrition. Serve over pasta and top with parm!

Skirt Steak and Farro Salad

Yes this is the same salad we ate 2 weeks ago and honestly, it’s so good that we’ll probably make it again next week too. I can’t even think of another salad that we’ve loved as much as this one. It’s the perfect dinner. We also used the leftovers to make wraps again - just roll it up in a burrito size tortilla and sear in a hot pan. So good!
