One thing I really wanted to do before the baby arrives is meal prep some recipes. It’s no secret that I enjoy cooking, but Adam is not as experienced in kitchen…
And as we all know, it’s completely unrealistic to expect me to continue preparing dinner nearly every night while recovering from giving birth and taking care of a newborn.
So I’ve been teaching Adam really simple dinners that he can easily handle on his own, but I also started paying attention to recipes we love that I could stock our freezer with, too!
I basically broke these down into 2 categories: leftovers and crock pot prep.
Leftovers = meals that I was cooking anyway! These either make a lot of food as is, or I made more than usual specifically so that we’d have extras to freeze. For this category, I made chili, lentil soup, Asian meatballs and Italian meatballs.
*Tip: Souper Cubes are key for freezing soups and sauces!
Crock Pot Prep = freezer bags of ingredients that you just have to defrost and dump into the slow cooker! Some of these recipes require a few additions when you actually cook them, but even still - it’s pretty much a set it and forget it situation. For this category I prepped beef stew and beef & broccoli.
