Happy Sunday! It’s been a lovely weekend over here - we celebrated our friend’s birthday on Friday and then we went to see James Taylor at Ravinia last night. Let me tell ya, he may be 76 but he’s still got it. He was amazing!
But now, let’s talk food! Here’s what I cooked last week:
Monday, June 3 - Protein Pancakes
I really didn’t want to go grocery shopping and I realized we had Clean Simple Eats Protein Pancake Mix in the pantry. BOOM! I wish we had fresh fruit on hand, but this was still really satisfying. I cooked up some Trader Joe’s chicken sausage patties to go with it, plus maple syrup, of course!
Tuesday, June 4 - Asian Meatballs
You know I make at least one old faithful recipe each week, and this week it was Ambitious Kitchen’s Firecracker Meatballs.
Wednesday, June 5 - Gnocchi and Veggies
Summer produce is here and this is such a celebration of that! I chopped up cherry tomatoes, zucchini, asparagus, and red onion and added to my favorite sheet pan with olive oil and seasonings. Roast at 425 for 10 minutes, then add gnocchi to the pan and put back in the oven for another 20. So simple but so delicious!
Thursday, June 6 - Salmon with Mango Salsa
I am on a big mango kick right now and I’ll definitely make this again. It’s loosely based off of this recipe - because I forgot to get coconut water, cilantro and coconut milk. Honestly, it still worked though!
