Happy Sunday! Since we were lazy last Sunday, we went to an event on Monday, and we were social this weekend, this was a light week of recipes. I only cooked 3 times, but they were all delicious, so let’s get into it!
Tuesday, April 30 - Chili Crisp Salmon, Broccoli, Cucumber Pepper Salad
I made our Chili Crisp Salmon again - SHOCKER. I put salmon (with Little Goat Chili Crunch on top) and broccoli on my nonstick sheet pan (on sale!). Bake at 425 degrees for around 20 minutes, until the salmon is done.
Instead of making rice, I made a salad with cucumbers, mini peppers, rice vinegar, and a little soy sauce. Plus, a few Trader Joe’s potstickers, because those never disappoint. YUM.
Wednesday, May 1 - Gnocchi, Chicken Sausage and Zucchini
I had another bag of TJ’s Cacio e Peper Gnocchi in the freezer so I thought I’d try to make it a new way this week. I air fried some chicken sausage so they’d get crispy, then sautéed thinly sliced zucchini in olive oil until it got nice and melty. Add the gnocchi in, mix it all together and you’ve got a delicious meal!
Thursday, May 2 - Skirt Steak with Asparagus and Potatoes
I’ve become a big skirt steak fan! I just marinate it in a little bit of soy sauce and Worcestershire sauce while I prep the veggies. I coated the mini potatoes in olive oil, salt, pepper, onion powder and garlic powder and then baked on my nonstick pan at 400 for about 30 minutes. Then I made some room in the middle and added the asparagus to the pan so it could bake for another 15 minutes with the potatoes. While that cooks, I seared the skirt steak on my cast iron. Easy peasy!
