Sunday 3/10 - Pot Pie Soup
Why yes I did make this Pot Pie Soup while streaming the Oscars red carpet on my computer. Hey Bradley!! Adam requested pot pie but I wanted something healthier, so we settled on this soup which was SO GOOD. Full of veggies but still ultra comforting. I made some Pillsbury biscuits for dipping too ;)
Monday 3/11 - Skirt Steak, Potatoes and Asparagus
I finally shot this cheesy potato side dish for you, so I promise I’ll be sharing it soon over on Instagram. It’s seriously the perfect Easter side dish! I made it with skirt steak (marinated in a little worcestershire and soy sauce) and air fried asparagus.
Tuesday 3/12 - Salmon and Broccoli
This might not look the prettiest (we were rushing out the door to see My Fair Lady - forgive me!) but we eat it nearly every week because it’s so easy and so good. I just top salmon with This Little Goat’s Chili Crunch, sprinkle broccoli florets around it, and bake it all in the oven at 425 for 15-20 minutes, depending on how thick the salmon is.
Wednesday 3/13 - Lemon Chicken, Salad, and Potatoes
We had a lot of leftover potatoes, so I made a big caesar salad (TJ’s dressing and a little grated parm!) and a lazy version of this Lemon Chicken to go with them.
Thursday 3/14 - Tortellini with Tomatoes, Zucchini, and Chicken Sausage
I wanted to make a sheet pan recipe with cauliflower gnocchi but Trader Joe’s was completely sold out of both cauliflower and sweet potato gnocchi! So I pivoted and got spinach tortellini instead I tossed those with lots of roasted tomatoes, zucchini and chicken sausage. I mixed in a little bit of kale pesto but it honestly didn’t need much because the tomatoes created a little sauce by themselves.
Friday 3/15 - Miku Sushi
We were thinking about using up random leftovers but when we were both hungry around 5pm, we decided a sushi date sounded more fun. Miku Sushi has a half price menu before 6pm, so that make it so much more affordable!
