Happy Sunday! I woke up feeling so run down this morning (despite barely having anything to drink last night - ugh), so I slept in and gave myself a few hours to just snuggle Luna and read and it was… incredible.
But now I’m back with today’s roundup - and there will be more peeks at these dishes on Instagram later too!
Sunday, April 21 - Cacio e Pepe Gnocchi, Asparagus & Arugula Salad
When I saw Cacio e Pepe Gnocchi at Trader Joe’s, I knew we had to try it. I had a feeling it would be kind of heavy so I paired it with a nice big arugula salad and asparagus.
For the salad, I used Brightland Olive Oil and Balsamic Vinegar (great Mother’s Day gift idea!) with some parmesan. I overcooked the asaparagus a little but I also kind of love how crispy the Wonder Oven (ON SALE!) gets it with just a tiny bit of olive oil, salt, pepper and garlic powder. YUM.
Monday, April 22 - Salmon and Broccoli
Here she is again - the perfect salmon and broccoli dinner. I just put broccoli and salmon on my nonstick sheet pan (also on sale!) with Little Goat Chili Crunch on the salmon. Bake at 425 degrees for 15-20 minutes, until the salmon is done.
I made some Trader Joe’s potstickers and rice to go with it, and we’ve started putting a little Japanese BBQ sauce on top too.
Tuesday, April 23 - Smash Burgers with Sweet Potato Fries and Pickles
Adam is obsessed with the burger at The Warbler so I thought I’d attempt to make an at home version. It was good, but burgers are MESSY 😂
I smashed the patties in between parchment paper and cooked them on a cast iron pan. It was easy, but since I’m still kind of new to cooking red meat, I forgot how greasy burgers are! I don’t think I’ll do this again - unless we’re grilling.
Wednesday, April 24 - Chicken Shawarma
Have you ever had Trader Joe’s Shawarma Chicken Thighs? They are pre-marinated and so flavorful! I like to make it with a greek-inspired salad of cucumbers, tomatoes, mini peppers, red onion, feta, olive oil and red wine vinegar. I also get TJ’s frozen Naan and Adam fills them like huge tacos. Such a good meal.
Thursday, April 25 - Pea Pasta
