Who was going to tell me that burger bowls are AMAZING?!
Happy Sunday! This week wasn’t fancy by any means, but everything was so delicious and fresh! Salads and fruit just taste better in the summertime - and this week, we had multiple salads, and took advantage of really good mangoes and peaches. YUM.

Burger Bowls
I’ve been burger bowls online before, but I never really paid attention to them… umm we’ve been missing out!! This was not only super easy but it was also DELICIOUS.
Pinch of Yum suggests cooking your ground beef in bigger chunks instead of really small pieces, like you would for tacos. That way, you get bites that actually tastes like a burger. So smart!
We put our meat over romaine lettuce with pickles, red onions, and sweet potato fries. I bought tomatoes too, but they were moldy 😭 I am also a mayo hater, so instead of making a “burger sauce” we just drizzled some of Trader Joe’s Hot Honey Mustard Dressing over the top. I literally can’t wait to make this again.
Potsticker Salad
Adam wasn’t home for dinner this night, so I made this very random salad that actually turned out really delicious. It’s just romaine, baby cucumbers, small snack peppers, peanuts, ginger dressing (I used one by a brand called Makoto) and Trader Joe’s potstickers. Delish!
Salmon with Mango Salsa
Mango salsa strikes again! Out of all the fruit right now, mangos have been the most consistent so I bought them again and I made the salsa with salmon instead of shrimp this time! I seasoned the salmon with salt, pepper garlic powder and paprika, and cooked it at 425 for about 20 minutes (it was still a little frozen - if yours isn’t, it might be done in 15!).
Mango Salsa:
2 mangos (I like champagne or honey mangos best), diced
1 red pepper, diced
2 tbsp (or so) minced red onion
handful of cilantro, minced
1-2 limes
salt and pepper
Steak Salad with Peaches and Arugula
In the words of DJ Khaled, ANOTHER ONE! Adam picked up some beef strips for stir fry but we decided to throw them on a salad instead! This week’s salad was arugula, peaches, farro, red onion, and simple lemon viniagrette. I didn’t measure, but I’d guess this was the recipe for the dressing:
1 large lemon
3-4 tbsp olive oil
1 squeeze of dijon or spicy brown mustard
1 squeeze of honey
salt and pepper
