Happy Monday! To be completely honest I thought I scheduled this to send yesterday but Father’s Day distracted me and I never checked. WOOPSIE! Anyway, I hope you all had a great day! Happy Father’s Day to all the Dads out there!
Also, after a kind of lackluster lineup last week, I am really excited about what we made this week. Everything was so fresh but filling - it’s finally starting to feel like summer!!
Pesto Chicken & Veggies
I swung by Trader Joe’s last week for a few things and picked up their pesto chicken breasts that went perfectly with some roasted potatoes and asparagus. Sometimes I forget that meals can be this simple!
I sliced baby potatoes and tossed them in olive oil, salt, pepper and onion powder. Those went on a baking sheet for 15 minutes at 425. When the timer went off I pushed them over to one side and added the chicken to the same pan. That cooked together for another 20 minutes. I recommend using a meat thermometer to make sure it’s cooked through!
I could have added asparagus to that same pan, but I popped them in our air fryer (after drizzling with olive oil and sea salt!) at 400 for about 8 minutes.
Shrimp and Mango Bowls
WOW THIS WAS SO GOOD! I tossed the shrimp with a little Siete Taco Seasoning and olive oil, then put them on skewers for Adam to grill. Let me tell ya, that is the MOVE - not just because it’s delicious that way, but because then all I had to do was heat up some frozen rice from Trader Joe’s and make the mango salsa! I topped mine with some tortilla strips and a lime wedge - both totally optional.
2 mangos (I like champagne or honey mangos best), diced
1 red pepper, diced
2 tbsp (or so) minced red onion
handful of cilantro, minced
1-2 limes
salt and pepper
Hibachi Chicken
This wasn’t as good as I wanted it to be - but I think that’s because I didn’t really follow the recipe 🤣 I didn’t have tahini or fish sauce, so the soy sauce really overpowered the mustard flavor. But did we still enjoy it? You betchya!
Steak Salad
I’m declaring this a steak salad summer! Since we’ve made this version a bunch already I thought I’d switch it up a bit. I still added farro, corn and steak - but instead of romaine, I ripped up some fresh arugula. I also swapped parm with the cotija cheese, and added tomatoes and toasted pumpkin seeds (YUM!).
For the dressing, I whisked a hefty tablespoon of pesto with balsamic vinegar and olive oil. SO GOOD.
