Last week was all about easy meals, in large part thanks to my favorite sheet pan. If you’re in the market for a new one, this one is nontoxic, nonstick, easy to clean, and PRETTY! Okay, now let’s get to the recipes..
Tuesday 4/2 - Skirt Steak and Brussels Sprouts
I’m getting better and better at cooking skirt steak and I’m so into it! I just marinate it in a little soy sauce and worcestershire sauce, and then cook it on a cast iron pan. I paired it with this brussels sprouts recipe which might be my favorite way to eat them ever. They’re SO GOOD. Trust me here.
Wednesday 4/3 - Chicken Fajitas
When in doubt, combine chicken, peppers, onions, and Siete taco seasoning on a pan and cook in a 425 degree oven for 25 minutes. I served this with tortillas, shredded lettuce, shredded cheese, and avocado.
Thursday 4/4 - Chicken Sausage, Veggies, and Halloumi
Another easy sheet pan meal! Just combine tomatoes, thinly sliced zucchini, thinly sliced onions, chicken sausage and halloumi with olive oil and Trader Joe’s Aglio e Olio seasoning or whatever seasonings you like best/have on hand. Bake in a 425 degree oven for around 20 to 25 minutes. I served it over a little pearl cous cous this time!
Friday 4/5 - Risi e Bisi
As soon as I saw this recipe in my Nana’s recipe binders, I knew I needed to try it! It’s basically a soupier risotto with more peas - and I love the pieces of pancetta in there too. Soooo good!
