Happy Sunday and Happy Mother’s Day! This week of recipes had a few mishaps and fails, but that’s real life, right?! I’m also very pleased that my best meal was when friends came over for dinner - it’s the best when that happens!
Sunday, May 5 - Chicken Cutlets, Risotto and Salad
I had chicken and arugula in the fridge to use up and I wasn’t sure what to do with it… and then Adam suggested risotto and I thought, why not?! I always forget how few ingredients it requires and it’s so good with chicken cutlets. I didn’t get the chicken very crispy this time, but I didn’t want to overcook them - always the struggle. I just dip them in egg and then breadcrumbs and bake them at 425. You can find my risotto recipe here!
Monday, May 6 - Brats, Corn and Salad
I almost forgot to take a photo of this meal… hence the bite! Adam grilled brats (that I got from Gene’s Sausage Shop!) and corn, and I made sweet potato fries and an arugula salad with a simple dressing of balsamic vinegar, olive oil, salt, pepper and dijon mustard.
Tuesday, May 7 - Asian Meatballs
This recipe from Ambitious Kitchen is one of our all time favorites! I usually like to serve it with a green - or at least a green garnish like cilantro or green onions but the broccoli I had went bad and I didn’t have anything else on hand. Woops!
Wednesday, May 8 - Pork Ragu
We had friends over to watch Top Chef this week since it was the restaurant wars episode and I made my favorite Pork Ragu! This recipe is so easy but feels really impressive… and it makes your home smell amaaaazing. I served I with a simple salad and they brought cannoli from a local bakery over for dessert. An ideal night!
Thursday, May 9 - Chicken, Potatoes and Green Beans
Not only did I forget to take a photo, but I overcooked the chicken, the potatoes never got crispy and it was just all around a bit of a fail. I don’t know what happened!
