Sunday, May 19 - Salmon with Cherry Tomatoes
This salmon recipe is one of my favorites, especially when tomatoes are in season! The combination of flavors are so good together - a winner every time.
Monday, May 20 - Dumpling Soup
This is the most random dinner I’ve made in a while, but it was honestly so good! I combined broth (I only had beef on hand and I think vegetable or chicken would be better) with ginger, garlic and chili crisp. I then cooked Trader Joe’s potstickers and soba noodles right in the broth. I thought I had spinach to add but it had gone bad… but next time I’ll get bok choy!
Tuesday, May 21 - Burgers and Salad
Adam offered to grill since it was so nice out, which made this the easiest meal ever! I served the burgers with Trader Joe’s Southwest Salad… and pickles, of course.
Wednesday, May 22 - Broccoli Pasta
I was majorly craving this pasta recipe this week! I didn’t have chicken sausage on hand but I had tons of broccoli, so I honestly didn’t really miss it. So simple but so delicious.
Thursday, May 23 - Greek Meatballs and Potatoes
I still can’t get over how good these Greek meatballs and potatoes were. Besides a little prep, this is SO easy since it just requires one sheet pan (use code SAVE20 this weekend!) and some patience. The result was so flavorful - I will absolutely be making this again!
