Sunday, June 23 - Salmon and Broccoli
Would it be a meal roundup without salmon?! If you’re new here, I put salmon (with this chili crunch on top) on this nonstick sheet pan with broccoli and bake at 425 for around 20 minutes, depending on the size of the salmon. I serve it over rice and with some Trader Joe’s potstickers!
Monday, June 24 - Naan Pizzas and Salad
I had naan in the freezer plus extra sauce and cheese in the fridge so I made little pizzas! It was so easy and delicious with a simple arugula salad on the side.
Tuesday, June 25 - Pork Tenderloin and Tortellini Salad
I forgot about Trader Joe’s Peppercorn Garlic Pork Tenderloin - have you had it?! I served it with an arugula, tomato, mozzarella and spinach tortellini salad. Tastes like summer!
Wednesday, June 26 - Peach and Halloumi Salad
I saw a peach and quinoa salad on Instagram and couldn’t get the idea out of my head, so I put one together! This has quinoa, peaches, halloumi (cut into small pieces and browned in a pan), thinly sliced cucumber, red onion, avocado and pistachios. I dressed it with salt, pepper, extra virgin olive oil and this delicious peach vinegar.
