Happy Sunday! I only made 3 recipes this week, but Memorial Day made it a short week, so that makes sense. I made an old faithful, a random idea I couldn’t get out of my head, and a new recipe that I didn’t love… but I think I can tweak. What did you make last week?!
Tuesday, May 28 - Salmon, Broccoli and Rice
When in doubt, I put salmon and chili crunch on this oven pan (nonstick and nontoxic!) with broccoli and roast it at 425 for around 20 minutes. Serve over rice and maybe add a few potstickers on the side. It never fails.
Wednesday, May 29 - Tomato and Halloumi Salad
My Mom got me this peach vinegar for my birthday (and pear and blackberry!) so I wanted to make a salad with peaches. They ended up not getting ripe in time, so I pivoted a bit and it was still delicious.
I cut up halloumi into small pieces and seared them in a pan to get them nice and golden. I combined that with lettuce (I think arugula would be better though), heirloom tomato, pearl cous cous, pistachios and some chicken. The dressing was only extra virgin olive oil, peach vinegar, salt and pepper. So simple but so good.
Thursday, May 30 - Green Pasta
Based on how much we love this pea pasta sauce, I thought I’d love this green sauce… but it wasn’t our favorite. To be fair, I didn’t have enough basil and I don’t love the parmesan cheese I got this time, so I think I need to give it another go.
