I’ve done breakfast meal prep here and there over the years, but having a baby has motivated me to really commit to doing it every week. Why? Because mornings can be really unpredictable with a little one!

Making and cleaning up breakfast just isn’t feasible on some mornings - unless I make sure I get up before him (despite the fact that his wakeup time changes day to day) or I wait until his first nap (which can lead to a growling belly if I’ve been up all night 🤣).

And yes, I know I could just have a bowl of cereal or a bar, but these recipes are soooo much better. Sure, it takes a little bit of effort to get the ingredients and prep them - but once they’re done, you’ve got healthy and filling breakfasts for the entire week.

Savory Pancake Muffins

1 lb raw breakfast sauasage
2 cups Kodiak Cakes Power Cakes Flapjack & Waffle Mix (You could use a different pancake mix too, but I like that this has protein in it!)
1.25 cups water
1 tbsp pure maple syrup
1 cup shredded cheddar cheese
1 tbsp chopped green onions or chives

1. If the sausage has casings, remove those and add the meat to a pan. Cook over medium heat, breaking the sausage into small pieces.
2. Combine the Kodiak Cakes mix with water and maple syrup.
3. Stir in the cheese, green onions, and cooked sausage.
4. Scoop the batter into a muffin pan* and bake at 400 degrees for 20 minutes.
5. Store in an airtight container in the fridge for up to 5 days. I bet you could freeze them too, but they never last that long in our house!

*I recommend this silicone muffin pan for easy cleanup! It’s structured on the sides but the muffins easily pop out/never stick.

Meal Prep Breakfast Burritos

1 lb breakfast sausage
1 bag shredded hashbrowns or 7 hash brown patties
seasonings of choice (I like salt, pepper, onion powder and garlic powder)
9 eggs
1/2 cup milk
1 cup shredded cheese
Any veggies you want to add! (peppers and onions are really good)

1. Preheat oven to 400 degrees.
2. Grease a 9x13 pyrex.
3. Add hash browns to the bottom of the pan and cook for 15 minutes. (If I’m using shredded hash browns, I’ll add a little olive oil to the bottom of the baking dish and season with salt and pepper.)
4. Cook sausage in a pan, crumbling it as it cooks.
5. In a bowl, whisk eggs, milk, salt and pepper. Stir in half of the cheese.
6. Take the hash browns out of oven and top with sausage followed by the egg mixture. Sprinkle more cheese on top.
7. Drop oven temp to 350 and bake for 30-40 minutes.
8. Let the egg mixture cool and then slice and roll in tortillas. We like to add a little sriracha (or we used Siete’s sundried tomato salsa this time - so good!) but that’s optional.
9. Roll in foil and store in the freezer!
10. When you’re ready to eat, air fry at 350 degrees for 20-25 minutes.
